2019 Amberjack Season Destin, Florida

Destin, Florida is affectionately called the “World’s Luckiest Fishing Village” and home to some of the best saltwater fishing in the United States. Fishing in Destin is successful year-round by land, docks, and pier but always the best on a boat! The 100 Fathom  (600′ depth) curve of the Gulf of Mexico draws closer to Destin than any other spot in Florida. This, along with Destin’s close proximity to the East Pass and the Gulf of Mexico, allows quick access to the Gulf of Mexico’s fishing bounty.

Destin fishing is fun year-round however FWC regulates what fish are able to be kept with seasonal and length restrictions to note. Currently, the fish to talk about, and on the docks are Amberjack! Amberjack is known to live out deep in the Gulf of Mexico and one of the most fun fish to fight and reel in! Amberjack is primarily caught on private deep sea fishing charters 6 hours and up to get out there deep and fast! The Greater Amberjack is a common catch on our offshore reefs and wrecks. Amberjack travels in large schools and puts up a great fight. Amberjack is in season thru October 31, 2019, and October (all month long) is the annual Destin Fishing Rodeo. All of Pelican Adventures‘ boats are registered in the rodeo and anglers fishing with Pelican Adventures are automatically entered! Amberjack is as tasty to eat as it is fun to catch.

How to cook Amberjack: Amberjack is best cooked fresh. Pelican Adventures’ crew cleans your fish and will filet and ice for you to take home. Marinating the fillets for a short time prior to grilling keeps the fillets moist. Place the fillets in a single layer into a glass baking dish. Coat the fillets with olive oil, sprinkle with fresh ground pepper, turn over the fillet and repeat the oil/pepper step. Let the fillets stand for 10 minutes. You can also use fancy bottled marinates but we think they disguise the flavor of this very tasty meat. Do not salt the steaks during preparation, salt can toughen the meat by drawing out the natural juices. Grilling amberjack is exactly the same as grilling a steak and takes the same amount of cooking time. Adjust the times below for your grill and for the thickness of the steaks. Remember fish cooks quickly so do not walk away from the grill during grilling. Preheat grill on high with the lid closed. When ready, open the lid, drop the temperature to medium and place fillets on hot rack. Cook 4 to 5 minutes, then turn and cook 3 to 4 more minutes. Don’t over cook this tender fish or it will become tough and less tasty.
